Released in November every year, this kimoto is our "nouveau" sake of our new brewing season.
Refreshing, clean and smooth on palate with umami complexities characterized by kimoto in texture.
Essense of this sake is in “super soft” water from the natural virgin beech forest, Shirakami 白神山地 UNESCO World Heritage mountains in Akita prefecture. Medium dry with rounded medium acidity.
